Firma byla založena roku 1993.
Jediný licencovaný lihovar v západní Australii.
Když přišel Raymond (Spike) Desert III v roce 1972 do Kimberlay, hned se do ní zamiloval. V nástupu pěstování cukrové třtiny v Ord River Valley viděl v roce 1995 Spike způsob, jak si splnit sen a tak vybudoval Hoochery - v současné době jediný legální lihovar v Západní Austrálií.
Ochraná známka Hoochery pochází ze slova Hooch a to je odvozené z Hutanuwu (později Hoochinoo), což je indiánský kmen z Aljašky, který vyráběl alkoholický nápoj. Později se tímto jménem označovali pašeráci.
Lihovar s malým kotlem postavil na své farmě nedaleko města Kununurra v srdci krásného údolí Ord River Valley. Jeho kapacita je něco přes 50.000 lahví rumu Ord River ročně.
