But the true old style of the Caribbean is white - and strong. Matured in very old oak casks which hardly colour it at all, this rum is bottled as it comes, at original proof. It is smooth, dry, clean. But handle it with care. The partners of Bristol Spirits have a mission; to rediscover the fine qualities of Rum in all its many styles. They search the Caribbean for individual rums from old plantations. By combining the qualities of those two countries, a rum is produced that offer so much more to the consumer.

Each rum in this blend has been aged in old oak casks for a number of years; each contributes its individual note to the final rich bouquet and flavour. At Bristol Spirits, it is our aim to seek out those rums of individual excellence and character still being produced in limited quantities, and bring them to the attention of the connoisseur. A Distinguished Assembly. For more than 300 years fine Rum has been distilled in the Caribbean from local sugar cane. From pot stills and column stills, hidden in forests and islands, come an astronishing variety of scents and and flavours; almost all, sadly, soon submerged in big commercial branded rums. But here Bristol Spirits have assembled a few of the very finest. After long ageing and scrupulous blending, such rums rival the finest distilled spirits in the world. Appreciate this fine rum on its own, as an aperitif or a digestive.

The providence estate one of Trinidad's oldest, lies near Chagunos, just south of the river Coparo. the distillery's springs are prized for their rare mineral traces, which lend finesse to the characteristically light Trinidad rum. Distilled in 1990, the spirit matured in England cellars until we bottled it straight from the wood, at 46%. Single patent still Trinidad rum.

Discovering the world's finest rums. Port Morant Distillery built in 1732, on the banks of the Demerara river, was one of the country's oldest, producing fine rum from its unique pot still. This is a rare chance to taste its smoky style, usually lost in commercial blends. Distilled in 1988, it was matured in England until 2000, when we bottled it straight from the wood. A great single pot still Demerara rum.

Discovering the world's finest rums. Port Morant Distillery lies deep in the rich Demerara canefield. This great rum was distilled in 1980. It matured for 18 years in American oak. Then it was decanted into new casks of rare French Limousin oak. This has imparted rich flavours of vanilla and tannin, and a darkl amber colour. A perfect aperitif, or a dramatic digestif. Discovering the world's finest rums. The Monymusk plantation. Founded in the early 18th century, the plantation of fine sugar cane lies in the south of Jamaica. At its heart, the gold pot still yields a delicate rum, whose finesse is rounded by 23 years in oak casks. Fragment to the nose, it shows traces of wood and vanilla on the palate. A lovely digestif after a fine meal. Single pot still Jamaica rum.
