Lihovar Le Rocher poblíž Pignon provozuje Romulus Bethel. Vyrábí se ze sirupu (nikoli z čisté šťávy), s přidáním přibližně 30% dunderu z předchozích dávek destilace. Sirup se pomalu vaří, aby si zachoval všechny aroma rumu a zároveň si zachoval charakter tří odrůd cukrové třtiny. Le Rocher je řemeslný single still still rum, stáčený „still proof“ bez jakéhokoli ředění - podle protokolu Clairin.
